Looking for a delicious vegan recipe? You’ve come to the right place. This one is an ABSOLUTE banger. Vegan, rich and incredibly delicious, this creamy peanut butter lentil curry will get rid of any January blues.
Thanks to our friends at Mani-Life for sharing this with us.
2 tbsp coconut oil
4 garlic cloves, cut in small pieces
Approx. 2.5cm (1 inch) piece of ginger, cut in small pieces
1 cup red lentils or green lentils (as preferred)
2 vegetable stock cubes
1 can crushed tomatoes (400g)
1 can coconut milk (400ml)
2 tbsp of ManiLife Deep Roast Smooth peanut butter
Salt and pepper to taste
1 tsp ground coriander
1 tsp ground cumin
2 tsp curry powder
1 tsp turmeric
In a large pan, heat the oil and add the garlic, ginger and all the spices together.
Cook for about 4mins, until the garlic scents the room.
At this point add in the lentils, the tomatoes and the vegetable stock – mix everything together and let everything simmer for about 20 minutes.
Remember to do this at low heat for the lentils to get soft and avoid anything burning (no one likes to scrub a burnt pan..)
Once the lentils are cooked, add in the coconut milk, ManiLife peanut butter and the pepper and salt to taste.
Stir everything together and let simmer for another 5-7mins.
Voilà – you are done! Serve this soul warming dish with jasmine rice and Naan bread.
ManiLife source the finest peanuts from a single-estate farm in Argentina, roast these beauties to perfection and blend them in small batches to create an award-winning taste explosion.
They source all their peanuts from one farm in Córdoba, Argentina. The real reason they source from these guys is because they are incredible people – they just so happen to have incredible peanuts too! The peanuts are not only naturally sweeter but as they’re hioleic, they’re better for you too.
As the original creator of the deep roast they were the first peanut butter brand on earth to start thinking about roasting peanuts the same way master roasters think about coffee. ManiLife prides itself on creating flavour through craft rather than ingredients. We think they’ve certainly got it right and they have 3 great taste stars to prove it!
ManiLife started by making 4,000 jars, one jar at a time. Whilst their batches aren’t quite that small anymore, they are still made in the UK based on the same principles and pride themselves as being one of – if not the only – widely available peanut butter brand in the UK that produces in small batches. Why? Have a taste of the thick, indulgently creamy, peanut butter in our January Lifebox and hopefully you’ll understand; you don’t get that with in line production.
